A well designed cleaning section at the mill is essential to produce the most optimal input material for pasta production. The cleaning of the wheat kernel surface, including an outstanding screening, is a very important process step to achieve excellent food safety by eliminating contamination with undesired impurities. Nowadays, optical sorters are common standards and applied throughout the grain processing industry. The sorters check every single grain kernel and sort bad ones out within milliseconds.
State-of-the-art grinding combined with effective control systems
Separating the different components of the wheat kernel is the main task in the mill. It is the core competence of a milling technologist to design the required process and to adjust the process parameters to transform wheat into the desired semolina or flour most efficiently.
With Bühler’s NIR online sensor technology parameters like ash, protein and moisture of the raw materials respectively the semolina or flour can be monitored and tracked in real-time. In addition the online particle size measurement system monitors the particle size distribution of the flour and the semolina, consequently allowing a smart and continuous control of the ongoing grinding process to meet product specifications.
