The most common defects

Defects that may be found in sheet pasta machines and that need to be taken into careful consideration when selecting and purchasing a model comprise:

  1. Failure to meet expectations of the overall quality of the pasta.

  2. Difficult cleaning and consequently ...

  3. Poor hygiene. The latest generation of sheet pasta machines has movable side protection walls that can be opened and washed. The purpose is to prevent the product coming into contact with the mechanical parts of the cylinders.

  4. Failure to keep the dough at a low temperature after a longer or shorter period of operation. Rolling the sheet, albeit much less so than extrusion, by causing a plastic deformation, generates heat. The machine needs to be able to dispose of this heat.

  5. Mechanical construction such as to cause infiltration from the pasta into the roller supports, bushings or bearings, or lubricant passing into the area of the dough.

  6. Low grade or unsuitable materials, which therefore quickly deteriorate.

    On average, the quality of the pasta obtained from automatic sheet pasta machines is good. Of course, a machine can never entirely reproduce the sensitivity of the pasta maker's hand. But automatic machines do make a constant product that does not suffer from the pace and urgency required by production, even though many models can vary their speed to adapt to this. Above all, they are totally indifferent to the operator's mood.
